Blackberry Cake
1 cup blackberries
2 cups flour, divided
1/2 cup butter, softened
1 cup sugar
2 eggs
1 tsp. baking soda
1 tsp. ground cinnamon
1 tsp. nutmeg
1/2 tsp. salt
1/4 tsp. cloves
1/4 tsp. allspice
3/4 cup buttermilk
whipped cream (optional)
Toss blackberries with 2 tbsp. flour, set aside. In mixing bowl, cream butter and sugar. Add eggs; beat well. Combine baking soda, cinnamon, nutmeg, salt, cloves, allspice and remaining flour; add to creamed mixture, alternately with buttermilk. Fold in blackberries. Pour in greased and floured 9" square baking pan. Bake at 350 degrees for 45-50 minutes or until cake is done. Cool on wire rack. Serve with whipped cream if desired. _________________ Shelly H.
